They differ in taste and aroma, which you can hardly find in pepper bought in regular supermarkets.


Black pepper when ground, releases tones of eucalyptus, camphor, and thyme accompanied by the scent of lime peel. These gradually transition into a seaside aroma with developing fruity notes. The dominant aroma is peach and nectarine, accompanied by the scent of pine and earthy tones of Cambodian mountain soil full of minerals.

Rare red pepper is an explosion of fruity notes with a milder spiciness. Initially, tones of rose and rosehip fruit dominate, which subsequently transition into dried cherries. After two to three minutes, more characteristic scents for Kampot pepper begin to develop, such as citrus fruits, dried mandarins, and the earthier crust of sourdough bread.

White pepper is a gentle, yet still peppery caress for your taste buds. When ground, it develops scents of camphor, sage, and cedar wood, accompanied by a gentle aroma of nutmeg flower, grapefruits, and other citrus fruits. After a few minutes in the mouth, you can feel notes of nutmeg, thyme flower, and lemon balm underpinned by the aroma of cedar and black tea.

Maintenance

By setting the coarseness of the pepper grind, you influence its flavor profile.

The smaller the fragments, the sharper the taste of the pepper will be. Conversely, larger fragments will impart more of the specific exotic tones of Kampot pepper to the dish.

When filling the grinder, never use bare hands, but pour the restless peppercorns directly from the package into the chamber, and use a spoon or funnel to help. At the same time, don't forget to clean your grinder regularly. However, never use water or chemical agents for this. A cloth is sufficient, a brush and a drop of olive oil. Always keep the grinder away from the sink and be careful with its operation also over steam.

The grinder is made from natural wood, or it combines a wooden head with a porcelain body.

All grinders have a unique wood grain and also a special surface finish, thanks to which they will last you for many decades. Porcelain grinders rely on the robustness and durability of porcelain, which is in a single contrast to the solid wood from which the head is made.
