Peppers differ from each other in taste and aroma, which you can hardly find in pepper bought at ordinary supermarkets.

Gift a unique box containing glass test tubes with the three basic types of Kampot pepper, which is not nicknamed in vain Champagne among peppers. It is recognized by its quality as the best pepper in the world and will perfectly enhance every dish. The set contains pepper for more than 400 servings of food.

Black pepper, when ground, releases notes of eucalyptus, camphor and thyme accompanied by the aroma of lime peel. They gradually blend into a more direct aroma with emerging fruity notes. The dominant aroma is peaches and nectarines, which are accompanied by the scent of pine and the earthy notes of Cambodian mountain soil full of minerals.

The rare red pepper is an explosion of fruity notes with a milder spiciness. At first, the notes are dominated by rose and rosehip fruit, which then transition into dried cherries. After two to three minutes, more characteristic aromas begin to develop for Kampot pepper, such as citrus fruits, dried tangerines and a more earthy crust of sourdough bread.

White pepper is mild, yet consistently peppery a caress to the taste buds. After it is ground, aromas unfold of camphor, sage and cedarwood, accompanied by a subtle aroma of nutmeg flower, grapefruit and other citrus fruits. After a few minutes in the mouth, you can sense tones of nutmeg, flower of thyme and lemon balm underpinned by the aroma of cedar and black tea.

Peppercorns come from small family farms in the Cambodian province of Kampot, where they have been cultivated for generations with respect for the soil, nature and people. Farmers adhere to traditional methods that ensure not only exceptional flavor but also the ethical origin of the product.

The set is also maximally environmentally friendly thanks to the use of recycled and natural materials that meet the certifications for sustainable forestry management.

Processing

Kampot pepper is divided into three basic colors, which differ in the processing of the fruits of the pepper vine.

In the case of black pepper the berries are harvested at the moment when the peppercorns are still green. They are then dried under the intense Cambodian sun, during which they acquire their characteristic black color and wrinkled surface.

Red pepper is obtained by harvesting fully ripe pepper berries. They ripen to a deep red color and are full of fructose, which gives this type of pepper its unique flavor.

White pepper is a specialty that is obtained from fully ripe red pepper berries. They are subsequently dried in the direct sun and then soaked again to enable the removal of the reddish skin, leaving only the cream-white pepper grain.

Thanks to the careful selection corresponding to the stringent requirements for the quality of Kampot pepper, as established by the Kampot Pepper Association, only the best berries are hand-selected. They are then vacuum-sealed to ensure the preservation of quality and freshness during the journey to the Czech Republic, where they are further sorted, packaged, and delivered right to your table.

Usage

Thanks to their varied taste, aroma, and spiciness, the different types of pepper are suitable for various purposes.

Black pepper is a universal, which will seldom get lost in any dish. Nevertheless, it is ideal to pair it primarily with dark red meat. It elevates any steak on the grill or pan to perfection, yet it also finds its application in classic sauces, soups and it also pairs wonderfully with pasta.

Red pepper, thanks to its fruity character, is the king of cold cuisine. It goes well into vegetable salads, pairs well with risotto, soups, and don't be afraid to experiment with it when preparing sweet desserts or mixed drinks. Rather than pairing it with dark meat, combine it with fish or light poultry meat.

White pepper goes well with light meat. It wonderfully enhances the flavor of seafood, and pairs well with risotto, creamy soupsand its flavor doesn't get lost even when combined with a good sauce.

The more finely you grind Kampot pepper, the more intense the spiciness will be, whereas larger fragments or whole grains will impart more specific notes of pepper to the dish.
