Delicate manual labour, unchanged for hundreds of years—that’s how coarse-grained sea salt is harvested.

It crystallizes on the surface of special pools called salt pans, into which seawater is channelled and retained. Through the effects of sun and wind, water slowly evaporates, forming salt crystals on the surface.

The resulting crystals are collected by hand, without any technological intervention, using only long wooden rakes. This preserves the salt's consistent structure, perfect purity, and highest quality.

Similar to Kampot pepper, the harvesting and processing of sea salt is managed by small individual farms. The farming families pass on the tradition of sea salt production from generation to generation. Consequently, the salt is of absolute organic quality, without the need for any subsequent refining. Just like with pepper, we purchase salt directly from these farmers, ensuring fair compensation for their hard work.

Usage

Thanks to its rapid absorption, it is ideal for any type of meat processing, e.g. koshering.
