Processing

The delicate manual work, unchanged for hundreds of years, describes the process of obtaining coarse sea salt.

It crystallizes on the surface of special pools called salinas, where ocean water is driven and enclosed. The water slowly evaporates under the influence of sun and wind, leading to the formation of saline crystals on its surface.

The resulting crystals are collected by hand, without any technical intervention, only with the help of long wooden rakes. This keeps the salt's structure consistent and the salt perfectly pure and of the highest quality.

The collection and processing of sea salt, similar to pepper in Kampot, is handled by individual small farms. Farmer families pass down the tradition of sea salt production from generation to generation. The salt is therefore in absolute bioquality, without the need for any subsequent refining. And just like with pepper, we purchase the salt directlyfrom these farmers to ensure they receive fair compensation for their hard work.

Usage

You can use coarse sea salt for everyday cooking.

Season with it, use it for pickling, preserving meat, fish, and vegetables, prepare marinades from it, let meat rest in a salt crust, or decorate the surface of baked goods with it.

Origin

Perfectly clean, full of flavor and minerals, such is the salt from the salinas of Cambodia's Kampot province.

The tradition of obtaining sea salt is as deeply rooted in the region as the cultivation of pepper. The conditions here are absolutely ideal. The intense sun, ocean breeze, and pleasant climate have been encouraging the establishment of salinas and the extraction of salt from the ocean for hundreds of years. Its quality can be compared to sea salt from the most renowned regions in France or Portugal.
