Kampot pepper is grown in Kampot province, located in the very south of East Asian Cambodia.

This is an area where, thanks to its coastal climate and geological conditions, local farmers are able to produce pepper of the absolute highest quality in the world. Not without reason has this pepper earned a protected geographical indication, similar to French champagne.
We purchase pepper from small family farms under direct trade conditions that guarantee a fair reward for every grower, and we strive to promote this approach among other traders.

Characteristic

White pepper is a gentle, yet still peppery caress of the taste buds.

After it is ground, they will unfold out of camphor, sage and cedar wood, accompanied by the delicate aroma of nutmeg flower, grapefruits and other citrus fruits. After several minutes in the mouth, you can detect notes of nutmeg, of thyme and lemon balm underpinned by the aroma of cedar and black tea.

Processing

White pepper is a specialty that is obtained from fully ripe red peppercorns.

They are subsequently dried on direct sunlightand then soaked again so that it is possible to remove the red husk, leaving only cream-white peppercorn.

Thanks to careful selection meeting the strict requirements for the quality of pepper exported from Kampot, set by the Kampot Pepper Association, only the best grains are hand-picked. They are then vacuum-sealed so that they can be preserved in quality and freshness during the journey to the Czech Republic, where they are further sorted, packed and delivered right to your table.

Usage

Thanks to their varied taste, aroma, and pungency, the different types of pepper are suitable for various purposes. White pepper goes well with light meat.

They wonderfully enhance the flavor of seafood, pairing well with risotto, creamy soups and its flavor is not lost even when combined with a good paste. The more gently you crush Kampot pepper, the the spiciness will be more intense, on the contrary, larger fragments or whole grains will impart the dish with more specific pepper notes.
