Kampot pepper is grown in the Kampot province located in the very south of Southeast Asian Cambodia.

It is an area that, thanks to its coastal climate and geological conditions, allows local farmers to produce pepper of the highest quality in the world. It is no coincidence that this pepper has obtained protected geographical indication, similar to French champagne.
We purchase pepper from small family farms under direct trade conditions, which guarantee a fair reward for every grower and we try to promote this approach among other traders as well.

Characteristic

The set consists of four types of Kampot pepper: black, red, white, and green.

They differ from each other in taste and aroma, which you can hardly find in pepper bought in regular supermarkets.

Black pepper releases tones of eucalyptus, camphor, and thyme after grinding, accompanied by the scent of lime peel. These gradually transition into a seaside aroma with developing fruity tones. The dominant aroma is that of peach and nectarine, accompanied by the scents of pine and earthy tones of Cambodian mountain soil full of minerals.

The rare red pepper is an explosion of fruity tones with a milder pungency. Initially, rose and rosehip fruit tones dominate, which then transition into dried cherries. After two to three minutes, the more characteristic scents of Kampot pepper begin to develop, such as citrus fruits, dried mandarins, and earthier crusts of sourdough bread.

White pepper is a gentle yet still peppery caress to the taste buds. After grinding, aromas of camphor, sage, and cedarwood develop, accompanied by a subtle aroma of nutmeg flower, grapefruits, and other citrus fruits. After a few minutes in the mouth, you can sense tones of nutmeg seed, thyme flower, and lemon balm underpinned by the aroma of cedar and black tea.

Green freeze-dried pepper brings the maximum fresh taste of green peppercorns. In this case, expect a peppery taste full of sharpness in a very intense and rich form. The taste of green freeze-dried pepper combines fresh tones of freshly cut grass, green tea, and citrus with a subtle hint of sea salt flavor.

Processing

Kampot Pepper is divided into three basic colors, which differ from each other by the processing of the peppercorn vine fruits.

In the case of black pepper the grains are harvested when the peppercorns are still green. They are then dried under the intense Cambodian sun, during which they acquire their characteristic black color and wrinkled surface.

Red pepper is obtained by harvesting fully ripe peppercorn seeds. They ripen to a deep red color and are full of fructose, which gives this type of pepper its unique taste.

White pepper is a specialty obtained from fully ripe red peppercorn seeds. These are then dried in direct sunlight and soaked again to remove the red skin, leaving only the creamy white peppercorn seed.

Freeze-dried green pepper is harvested from fragile, still unripe peppercorn seeds. Instead of traditional sun drying, it undergoes a freeze-drying process – drying by freezing, which removes moisture from the seeds. Added Kampot salt preserves their freshness even during transport. After unpacking, a drop of oil or water is enough for them to absorb moisture again, and the pepper regains its original texture and flavor as if it had just been picked from the vine.

Thanks to careful selection meeting strict quality requirements for Kampot pepperset by the Kampot Pepper Association, only the best grains are handpicked. They are then vacuum-sealed to preserve quality and freshness during the journey to the Czech Republic, where they are further selected, packaged, and delivered directly to your table.

Usage

Thanks to the different taste, aroma, and spiciness, individual types of pepper are suitable for different purposes.

Black pepper is a universal spicethat does not get lost in any dish. However, it is ideal to pair it primarily with dark red meat. It elevates every steak on the grill or pan to perfection, but it also finds its use in classic sauces, soups and goes excellently with pasta.

. Red pepper, thanks to its fruity character, is the king of cold cuisine. It suits vegetable salads, goes well with risotto, soups, and don't be afraid to experiment with it when preparing sweet desserts or mixed drinks. Rather than with dark meat, combine it with fish or light poultry meat.

White pepper is suitable for light meat. It wonderfully enhances the taste of seafood, pairs well with risotto, creamy soups, and its flavor is not lost even in combination with good pasta.

Freeze-dried green pepper from Kampot is the most versatile of the green peppers we offer. Crushed, it goes perfectly with any kind of meat, dark, light, game, and fish. It refreshes pasta, baked dishes with cheese and mushrooms as well as sauces. It definitely does not go unnoticed in autumn soups, you can experiment with it in desserts and ice cream, and the most gourmet can also enjoy it in combination with truffles.

The finer you crush Kampot pepper, the more intense the spicinesswill be; conversely, larger fragments or whole grains lend the dish more specific pepper tones.
